Rosemary Garlic London Broil

Ingredients
- Beef London Broil
- Coarse Salt
- Pepper
- Dried Rosemary (or Oregano)
- Garlic powder
- 2 tablespoons Butter (or other fat)
Directions
Pat beef dry with paper towels and lay in a 9x13 pan. Sprinkle all over with coarse salt (not too much, though!), black pepper, garlic powder and crumbled rosemary. Cover with plastic wrap and let sit at room temperature for 1 hour.
*Meanwhile, if you want to serve this with baked potatoes and roasted veggies, preheat the oven to 400 F and go ahead and put your potatoes in to bake. You can then prep your veggies, toss them in olive oil with salt and pepper and have them ready to go into the oven just before starting the beef.*
Heat a cast iron skillet over medium-high heat and melt 2 tablespoons of butter in it. Immediately add the London broil and sear on every side. Then place the skillet into the oven at 400 F and bake for about 30 minutes. (This time is entirely up to you. 30 minutes will get it to about medium-well.)
Remove from oven and let rest for 10 minutes before carving. Transfer to cutting board, slice thinly against the grain and serve immediately. Enjoy!
***Don't forget, if you have leftovers, they make fantastic sandwiches or omelettes! I think the best part about making this London Broil for dinner was eating it my eggs for breakfast the next morning!
